Beetroot Pachadi

Beetroot Pachadi is a dish that is part of the Kerala cuisine of South India. It is prepared from Beetroot and curd seasoned with mustard seeds. Beetroot Pachadi is usually served as part of Onam sadhya.

Ingredients:

Beetroot – 2 medium(peeled & grated)

Onion – 1 small

Green chillies – 2(chopped)

Salt – to taste

Curd – 1 cup

Mustard seeds – 1 tsp

Curry leaves – few

Red chillies – 5

Oil

 

Method

  • Combine beetroot, onion, salt & green chillies in a pan.
  •  Add 1 cup of water & cook till the beetroot becomes soft & there must be no water left in the pan
  • . Add beaten curd & when it starts boiling remove from fire.
  •  Take a pan, heat oil, splutter mustard seeds, red chillies & curry leaves.
  • Pour this on top of beetroot curd mixture & serve hot.
