Pineapple Keasri is a very sweet dessert having the goodness of Semolina and Pineapple. Adding Pineapple in semolina makes it more tasty and tempting. The freshness of pineapple is melted with the sweetness of sugar ,ghee and semolina building layers of extra ordinary flavors.
Rava Keasri is a popular south Indian dish having its root in Karnataka, where it is also known as Kesari bath.
Always use fine semolina to cook the kesari rather than thick or coarse semolina. It is easy and quick and gives a nice texture to the dish. Use fresh,juicy and sweet pineapple for making pineapple kesari.

Ingredients

4-5 tbsp Ghee
1 Cup Rava/Semolina
3 Cups Water
1 Cup chopped Pineapple
a pinch of Salt
1 Cup Sugar
Yellow food colour (Optional)

Method

Heat 2 Tsp ghee and fry cashews. When its done transfer to a bowl.
Add more ghee if required and fry Semolina/Rava until the rava becomes aromatic. Transfer to a plate.
Heat 3 cups of water in the same pan add chopped pineapple and a pinch of salt. You can also add yellow food colour if using. Let it boil. Mash the pineapples.
Keeping the flame to low ,add the roasted rava and keep on stirring until the moisture is absorbed.
Close and cook for 2 mins or until the rava is cooked .
Add 1 cup of Sugar and mix well. Stir well until sugar dissolves and evenly mixes with rava, Keep stirring until it thickens. Add 2 to 3 Tsp ghee in intervals while stirring until it leaves out pan and combines well. Add the roasted cashews and mix.

Serve warm and enjoy !!
