Lemon rice is a very popular dish and is made often in most homes for a quick lunch or dinner & is a special one.Kids would love this quick lunch box recipe. The tanginess of the lemon imparts a special aroma to this simple rice delicacy.
Ingredients
Cooked rice – 1 1/2 cup
Lemon juice-from one lemon
Mustard seeds-1 tsp
Raw peanuts(optional)-1 tsp
Chana dal-1 tsp
Urad dal-1 tsp
Dry red chilly-2 nos
Green chilly-1 slited (optional)
Turmeric powder-1/2 tsp
Curry leaves – 1 spring
Salt to taste
Method
- Take cooked rice in a bowl and mix it with some salt and juice from 1/2 lemon.Set aside.
- Heat oil in a pan,splutter mustard seeds.Add in chana dal,urad dal,peanuts and lightly roast it.
- Now add in dried red chilly pieces ,green chilly and curry leaves.And add in turmeric powder.Mix well.
- Finally add rice into it and mix all together.
- Add balance lemon juice into it.Adjust the salt.Serve with some pickle.
