A simple and tasty vegetable stew that goes well with rice, Chapattis, Appam etc. It’s a very tasty and delicious dish.

Ingredients
Carrot- 1 (cubed)
Potato- 1(cubed)
Green peas-1/4 cup
Coconut oil-
Salt -to taste
Onion -1 sliced finely
Green chilies – 2
Ginger & Garlic -1 tbsp each crushed
Cardamom – 4
Cloves -3
Cinnamon -1 piece
Thin coconut milk-1 1/2 cup
Thick coconut milk-1/2
Method
- Heat oil in pan and splutter crushed spices.
- Add onion,ginger-garlic,green chillies and curry leaves and saute for few minutes till onion becomes transparent.
- Add cubed vegetables and combine well.
- Add thin coconut milk and salt into it.Pressure cook it for one whistle,or cook till the vegetables become tender.
- Add thick coconut milk and cook for few seconds.
- Remove from fire and Garnish with curry leaves and serve hot with chapatis,Roti etc.
