Ingredients
Basmati Rice/Jeeraka sala rice-2cups
Onion-2 small
Onion-2 for frying
Cashewnuts-handful
Raisins-handful
Tomato-one
Vegetables – Finely chopped Carrots, Beans, Capsicum, Potato etc
Ginger-small piece
Garlic-4 cloves
Green chilli-4
Turmeric powder-1/4tsp
Chilli Powder-1/2tsp
Garam masala-1tsp
Coriander leaves- Mint Leaves-
Curd-1 tbsp
Cardamom-3
Cloves-3
Cinnamon-1 stick
Fennel seeds-few
Bay leaf-1
Salt
Ghee
Lemon Juice -1tbsp
Water-3 3/4 cups
Method
- Wash rice thoroughly and soak for 20 minutes .
- Roast thinly sliced onion(1) till golden color.
- Roast cashew nuts and raisins in ghee and keep aside.
- Heat ghee or dada in a cooker. To that add whole spices and roast. Then add a ginger-garlic-green chili mix. Saute for 2 minutes in medium flame. Stir continuously Then add finely sliced onion (2) and add some salt and saute until golden color. Then add mint-coriander leaves and saute. Then add turmeric powder, chili powder, and garam masala powder and saute until the raw smell goes. Now add finely chopped tomato ..Cook until oil comes out. Now add curd and mix well. Then add all vegetables and mix well. Cook for 2-3 minutes in medium flame. Then add water and mix well. Check the taste. Add salt and spices if required. Let it boil well. Add drained rice and mix well. Close the cooker without the weight and cook in low flame for 7 minutes. Then turn off the flame and remove the cooker and allow it to rest for 15 minutes. After 15 minutes open the cooker. Using a fork puff up the rice. Finally sprinkle roasted cashew nuts, raisins, onions You can add some more mint and coriander leaves. Sprinkling some ghee will enhance the taste.
