Plum cake

We buy a lot of plum cakes especially during Christmas to gift family and friends. Why not make a change by gifting homemade plum cakes? It makes a huge difference. Do you agree with me? Homemade cakes are far better than ready-made cakes. Isn’t it?

Here go the recipes of a simple plum cake.

Ingredients

Flour- 1 cup

Baking powder-1/2 tsp

Baking soda-1/4 tsp

Caramel syrup-1/4 cup

Unsalted butter-100 gms

Mixed spices powder-1/2 tsp (Cardamom -5,Cloves-5 and cinnamon-1)

Egg- 2

Vanilla essence-1 tsp

Sugar- 90 gms, Powdered

Rum- 1 tsp

Dry fruits-2 tbs

Method

  • Prepare a 7-inch cake pan and line it with butter/oil and line a butter paper. Preheat the oven for 10 minutes at 150 degrees C.
  • Prepare caramel syrup: Take a pan and add 1 cup sugar and 2 TBS water and heat, when the color changes add 1 cup water and stir. When it attains the texture similar to honey remove from fire. Allow it to cool
  •  Sieve the dry ingredients, flour, baking soda, and baking powder.
  • Separate egg white and yolk.
  • Beat egg whites until it turns fluffy.
  • Take another bowl and beat butter sugar, egg yolks, and vanilla essence. Beat until it is incorporated thoroughly.
  • Add half of the dry ingredients into the above mix. Add in caramel syrup and rum and mix. Add mixed spices powder into it and mix. Add the rest of the dry ingredients and mix.
  • Now fold in the egg white into it
  • Coat the dry fruits with some flour and add into the batter. The batter should be thick.
  • Pour the batter in the prepared tin and tap the baking tin to release air bubbles if any, and bake in a preheated oven for 30-40 mins or until a toothpick inserted comes out clean. Allow it to cool for 5 minutes before de-molding it.
