Kozhukatta

This is a simple and quick to make recipe that makes a healthy and wholesome meal. Kozhukatta is a very traditional dish of Kerala especially among Christians.This is a very sweet dish made from rice flour a,jaggery and coconut . This can be served with tea as a tea time snack. The dough of coconut is similar to that of idiyappam.Kozhukkatta copy

Ingredients
Rice flour- 1 cup
Jaggery -100 gms( as per requirement)
Grated coconut- ¾ cup
Cardamom powder-1 tsp
Water- 1 cup
Salt

Method

•Melt the jaggery with little water around ¼ cups and strain it. Mix the grated coconut to the filtered jiggery. Also add the powdered cardamom and mix well. Remove from fire and keep it aside.
•Boil 1 cup of water with salt. Add the boiled water to the rice flour by little and mix well using spoon or spatula. Knead the dough and make small balls. The consistency of the dough should be same as that of idiyappam and make sure that it is not sticky.
•Take one ball at a time and place it in your palm. Press it with another hand and make it thin. Fold it inwards in order to get a cup shape. Place 1-2 tsp of the jaggery coconut mix, and cover it and roll it back into ball.Repeat the process with rest of the balls.
•Steam the kozhukattas in a steamer for 10 minutes on medium flame and keep it covered for one minute.

Serve with tea.
