Pazham Nirachathu/Stuffed Banana-A malabar special dish

Ingredients
  • Ripe banana/ Plaintain- 4 Nos
  • Grated coconut- ½ cup
  • Maida- 1 cup
  • Rice flour- 2 tbsp
  • Turmeric powder- ¼ tsp
  • Salt- a pinch
  • Water - as needed
  • Cashews- 6-7 chopped
  • Raisins-6-7
  • Seasame seeds- few
  • Powdered cardamon- 1 tsp
  • Sugar- 2- 3 tbsp
  • Ghee- 2-3t bsp
  • Oil- for deep frying
Instructions
  1. Batter- In a bowl add Maida, rice flour,turmeric powder and salt .Mix all the ingredients by adding water little by little until you get a thick batter .Keep it aside.
  2. Add 2- 3 tbsp  ghee in a hot pan and saute the cashews until it turns golden  brown or until done. Add  raisins and saute for a minute or so.Now add Grated coconut and saute  until it is well coated with ghee.add seasame seeds and mix. Sprinkle powdered cardamon and mix. Turn off the flame and keep it aside.  Allow to cool down.Add 3-4 tbsp sugar and mix.
  3. Peel off the skin of banana  and make a shallow slit length wise. Now fill the coconut -cashew mixture into the slit made in the banana.Dip the this stuffed banana in the prepared batter. Make sure to cover the banana with the batter.
  4. Heat oil in a deep pan and deep fry the stuffed banana until they become golden brown in colour. Dont forget to flip the banana in between.Drain the fried bananas into tissues to absorb excess oil.
  5. Serve this delicious and tasty  and hot stuffed banana fry   with a  cup of tea.
