Steamed Banana dumplings/ Ethakka kumbilappam

A steamed sweet dish of Kerala
Ingredients
  • Steamed banana -3 big
  • Rice flour - 1 cup
  • Grated coconut- ½ cup
  • Powdered (cumin,cardamon and sugar)- ½ cup
  • water
  • salt - apinch
  • bay leaves/edanaela-
Instructions
  1. Crush the steamed banana nicely with a spoon or by hand.
  2. Add rice flour to this and mix well.Add little water if required.
  3. Now add grated coconut and mix well.
  4. Add the powdered cumin,cardamon and sugar mix into this and mix well.Make sure that all the ingredients are incorporated fully.
  5. Last add a pinch of salt in to the dough.
  6. Now take one bay leave and shape it into a cone and fill in with a spoon of the dough and close it.Similarly make other dumplings.
  7. Steam the dumplings in a steamer or idly pot for about 10-15 mins or until done.
Notes
The quantity of crushed Banana should be more than the rice flour,So adjust accordingly.
