Mahagony cake

Serves: 6-8
- 200 gm sugar( powdered)
- 180 gm Maida
- 180 gm Butter
- 2 Eggs
- 3-4 tbs Cocoa
- 2 tbs Nescafe
- 100ml water
- 1 tsp Vinegar
- 1 tsp Vanilla essence
- ¾ tsp Baking soda
- ¼ tsp Salt( can be avoided if butter is salted)
- Preheat the Oven to 200 degree C and grease a standard baking tray.
- Dissolve Cocoa, nescafe and water by boiling .Keep it aside, let it cool down.
- Beat 2 eggs with hand mixture till soft and fluffy.
- Mix butter and powdered sugar till smoothens
- Sieve together Maida,Baking Soda and Salt 3 to 4 times.
- Now combine together the dry and wet ingredients ie, beaten eggs,butter and sugar and the Maida.
- To this add the coffee mix and mix well with a wooden/ silicon spatula.
- Add vinegar and vanilla essence.
- Pour the Cake Mix into the prepared tray and bake for 30 to 40 mins or until it is done in the Preheat oven to 200 degree C
- Remove to a wire rack. Let it cool completely.
