- Potatoes- 2 Medium big
- Onion-1/2, finely chopped
- Green chillies-2, Finely chopped
- Ginger-1 Tsp
- Curry leaves- few
- Oil- 2 Tbsp
- Mustard seeds- 1 Tsp
- Coconut paste- ½ cup
- Water- 1 cup
- Cook the potatoes by adding sufficient water in a pressure cooker on a medium flame for 2 whistles. Peel off the skin when the pressure releases.
- Heat oil in a Pan and splutter mustard seeds. Add curry leaves, chopped ginger, green chilies and saute for a minute.
- Add Chopped onion and saute till it turns soft. Adding little salt will make the cooking process faster.
- Mash the potatoes and add this into the pan and mix.
- Add 1 cup water and mix till it blends. Allow it to boil.
- Add Coconut paste and mix well. Let it boil. Turn off the flame and cover for 5 minutes.
- Tasty and Easy Potato Stew is now ready. Serve with Chapati, Appam, Idiyappam and so on...
