Potato Stew

Ingredients
  • Potatoes- 2 Medium big
  • Onion-1/2, finely chopped
  • Green chillies-2, Finely chopped
  • Ginger-1 Tsp
  • Curry leaves- few
  • Oil- 2 Tbsp
  • Mustard seeds- 1 Tsp
  • Coconut paste- ½ cup
  • Water- 1 cup
Instructions
  1. Cook the potatoes by adding sufficient water in a pressure cooker on a medium flame for 2 whistles. Peel off the skin when the pressure releases.
  2. Heat oil in a Pan and splutter mustard seeds. Add curry leaves, chopped ginger, green chilies and saute for a minute.
  3. Add Chopped onion and saute till it turns soft. Adding little salt will make the cooking process faster.
  4. Mash the potatoes and add this into the pan and mix.
  5. Add 1 cup water and mix till it blends. Allow it to boil.
  6. Add Coconut paste and mix well. Let it boil. Turn off the flame and cover for 5 minutes.
  7. Tasty and Easy Potato Stew is now ready. Serve with Chapati, Appam, Idiyappam and so on...
