- Carrot- 1 (cubed)
- Potato- 1(cubed)
- Green peas-1/4 cup
- Coconut oil-
- Salt -to taste
- Onion -1 sliced finely
- Green chilies - 2
- Ginger & Garlic -1 tbsp each crushed
- Cardamom - 4
- Cloves -3
- Cinnamon -1 piece
- Thin coconut milk-1½ cup
- Thick coconut milk-1/2
- Heat oil in pan and splutter crushed spices.
- Add onion,ginger-garlic,green chillies and curry leaves and saute for few minutes till onion becomes transparent.
- Add cubed vegetables and combine well.
- Add thin coconut milk and salt into it.Pressure cook it for one whistle,or cook till the vegetables become tender.
- Add thick coconut milk and cook for few seconds.
- Remove from fire and Garnish with curry leaves and serve hot with chapatis,Roti etc.
