Cashew Balls

Ingredients
  • Rice -1 cup
  • Cashew nuts- 2 cup
  • Shredded coconut- ½ cup
  • Jaggery- as required
  • Cardamon powder- 1 tsp
Instructions
  1. Wash and stain the rice and dry roast the rice in a pan without adding oil until it turns brown.The rice will become crispy and starts  crackling.Remove from flame.Allow it to cool.
  2. In the same pan dry roast cashews, until they turn brown.Take care not to burn or become black.Remove from flame and allow it to cool.
  3. Using a mixer grinder make a fine powder of the roasted rice.Next grind the roasted cashews.The cashews neednot become fine powder.Just pulse it 4-5 times.
  4. Take a large bowl and transfer the powdered rice,cashews ,grated jaggery,cardomon powder,shredded coconut and mix using hands.Transfer the mix into the mixer grinder and pulse it 4-5 times to help it bind properly.
  5. Transfer the contents into the bowl and make small balls,by pressing it tightly in your palms, shaping them like laddus.This can be stored in airtight container for 2-3 days.
  6. Serve them as a snack in kids lunch box.
