Carrot pineapple cake, a delicious cake loaded with fresh grated carrots and pineapple, all topped off with smooth butter cream icing. This is a simple and easy variety cake recipe for beginners in baking.

Ingredients
Maida-200
Butter- 180gms
Powdered sugar-200gms
Baking powder-1 tsp
Vanilla essence- 1tsp
Carrot-1 (medium size grated)
Pineapple jam- 100gm
Egg-3
For icing :-
Icing sugar-200gms
Butter-100 gms
Method
- Preheat oven at 180 degrees for 10 minutes before baking
- Prepare the baking tray by putting the butter paper in the tray.
- Beat butter for 5 minutes,remember to beat in one direction only.
- Add the powdered sugar gradually say 2 tbsp at a time and beat for 10 minutes till it becomes off white colour.
- Add egg one by one and beat.Make sure that you add each egg after the proper mixing of each egg. Dont beat after proper mixing.
- Add vanilla essence .
- Sieve maida and baking powder.
- Add in the grated carrot into the maida and mix with a spoon ,So that the carrot wont get settled at bottom.
- Now add the above carrot maida mix into the butter egg mix and fold in.
- Add the pineapple jam into the batter.Remember to beat the jam if it is jelly type otherwise it will appear as lumps.Home made jam donot require beating as it is loose.Fold in the batter till you get a dropping consistency.
- Now pour the batter in the baking tray and Bake the cake at 180 degrees for 30 minutes.
- Allow the cake to cool down completly before icing.
- Beat butter in one direction only for 5 minutes and add sugar little by little.
- Apply the icing on the cake.
- Tasty and yummy carrot pineapple cake is now ready.
